There's existing pre-built binaries somewhere which you may use... but did you ever consider the unofficial "Ubuntu-lite"? See https://wiki.ubuntu.com/UbuntuLite
If you plan on using slightly older hardware with the ease of ubuntu packages, you may as well start with a lighter system anyways.
